One Recipe, Two Delicious Puddings

Two Puddings for 2 people for 2 days

Ingredients
120g self raising flour
75g natural yoghurt
30g caster sugar
half a tsp of vanilla extract
2 eggs
50g low fat spread
1tbsp runny honey or to taste
Assorted frozen or foraged fruit of your choice
Method
Place the frozen fruit in a pudding basin with the honey and microwave for 2 minutes
Add all other ingredients to the blender and blend until mixed. Stir the mix with a metal spoon and blend again.
Add half the mix to the top of the warmed fruit and microwave. This will vary mine is about 4 minutes. The top should be solid.
Turn onto a plate and if the middle isn't cooked through cook in 30 second increments shouldn't take more than a minute and a half. This is dependent on the water content of the frozen fruit,.
Serve with custard or ice cream.
Place the remaining mix in the fridge and make a different pudding tomorrow!
Tomorrow's pudding
Breadcrumb 2 slices of white bread. Place runny honey into 2 ramekins, add the breadcrumbs, stir and top with the pudding mix. Cook as before but will be less time because they are individual dishes.
